Dance Bakes is the second bakery from Jiah and Jamie Min, the couple behind Port Melbourne's Heart Bakes, and it exists largely because of one thing: cinnamon scrolls. Heart Bakes' scrolls took off online in 2023, and demand got big enough that the Mins spent a year scouting sites and another six months renovating before landing on this Union Street spot in South Melbourne. Head baker Gigi Chaiyarat and the kitchen team start at 5am, mixing and proofing dough so the first scrolls are out of the oven by 8am — a routine that produced more than 800 sold scrolls a day across its opening weekend, selling out before 1pm on the Sunday. The lineup currently runs to four varieties: the original cinnamon scroll, a banoffee version with salted caramel, banana and chocolate crumble, a Mont Blanc laced with Dukes espresso and topped with cinnamon-nutmeg icing, and a savoury three-cheese and Vegemite scroll finished with gruyere. Beyond the scrolls, the Mins are folding more of their Korean background into the menu, with sandwiches, sogeum-ppang (Korean salt bread) and a signature Korean-style cream coffee planned as the bakery moves out of its soft-opening phase. It's a small, counter-service space built for grabbing something on the way past rather than lingering, so turn up early if a specific scroll flavour is non-negotiable — the popular ones don't last until lunch.
