Castlerose opened in early 2024 beneath Clementine, the daytime café on Palmerston Crescent in South Melbourne, with guests descending a spiral staircase into a basement fitted out in dark timber to resemble an English smoking lounge. The venue was created by hospitality veteran Glen Bagnara, who also owns Hemingway's wine bar and Bar Bianco in Prahran, and draws its concept from 20th-century English dining rooms and continental European supper clubs. The food menu covers pickles, olives and charcuterie through to larger plates such as crispy confit duck cigars with orange zest and aioli, duck liver parfait éclairs with cranberry jam, mac and cheese with an optional lobster addition, steak tartare and slow-braised beef short ribs. A vintage cheese trolley is wheeled tableside for guests to select from, and desserts include a strawberry Eton mess served in a crystal jewellery box-shaped dish. Drinks span house and classic cocktails, including the signature house sour Spitfire, alongside champagne, German and Italian red wines and French and Italian whites. The dimly lit, intimate room suits evening drinks, small celebrations and dinner bookings rather than casual daytime visits, and the space is also available for private functions and events.
